Vegetable Soup - A Healthy Choice

<< Vegetable soup is a low-calorie alternative to salad at any meal. You can double this healthy soup recipe and adjust the ingredients and seasonings to suit your own tastes.


Ingredients:

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp. oil or margarine
  • 2 zucchini, sliced
  • 1 cup carrots, sliced
  • 2 cups diced tomatoes
  • 2 stalks celery, chopped
  • 2 chopped tomatoes or small can of diced tomatoes(/li>
  • 4 cups water
  • For a ‘meat' dish, add 4 cups chicken or beef broth instead of water
Seasonings:
  • 1-2 tsp. salt
  • ¼ tsp. pepper
  • ½ tsp. dried basil
  • ½ tsp. oregano
  • ½ teaspoon parsley

In a Dutch oven, saute onion and garlic in oil or margarine until onion is translucent. Add remaining ingredients to the pot (except for the liquid) and cook on medium heat for 8-10 minutes, stirring occasionally. Add water and bring to a boil. Once the water boils, reduce to a simmer for 30 minutes.

When the veggies are soft, taste the broth and add more seasonings, to taste, if desired.

You can remove 2 cups of the veggies and process the remainder in a blender, if desired. Once processed, add the 2 cups of the reserved solid vegetables to the smooth soup for added texture. Otherwise, you can just leave the “solid” chunky soup as is and enjoy. Add beans, croutons or noodles if desired.
