Turkey Meatloaf

Turkey Meatloaf is a flavorful alternative to tradtional meatloaf recipes using ground beef. This recipe does not involve too much preparation and can be assembled and refrigerated for later baking. The seasonings and vegetables provide great textures and flavor to the lean turkey meat. Give this meatloaf a try and save a lot of calories without sacrificing great taste!

Ingredients:

  • 1/2 cup grated carrot
  • 1/2 cup finely chopped celery
  • 1 cup finely chopped onion
  • 2 large eggs, lightly beaten
  • 1 tbsp. Worcestershire sauce
  • 1 tbsp. dry mustard powder
  • 1 1/2 tsp. garlic powder
  • 1 tsp. salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon parsley flakes
  • 1 cup ketchup (reserve 1/2 cup for topping)
  • 1/2 cup bread crumbs or matzo meal
  • 2 pounds ground turkey
  • Preheat oven to 350F. Grease a loaf pan with cooking spray or oil.

    In a large bowl, stir together carrots, celery and chopped onion.

    Add the eggs, Worcestershire sauce, mustard, garlic powder, salt, pepper, parsley flakes and a 1/2 cup of ketchup.

    Blend the ingredients.

    Add bread crumbs and ground turkey. Stir until all ingredients are incorporated but do not overmix. The mixture should be firm but not too dry. If the loaf lacks moisture, add 1/4 cup of water or additional ketchup.

    Place the turkey mixture into greased loaf pan. Brush remaining 1/2 cup ketchup over the top of the turkey meatloaf.

    Bake for 60 minutes. Cut into slices when cooled.

    Note: If the meat is stuffed very tightly into the loaf pan, place a pan underneath to catch any spills.
