Sufganiyot - No Yeast Recipe

Sufganiyot is a traditional jelly doughnut recipe that is usually served during Chanukah. This is a particularly easy baking recipe because it is made with baking powder, not yeast.
Ingredients:
- 2 eggs
- 4 tbsp. sugar
- 1 tsp. vanilla
- 2 cups plain yogurt
- 3 cups flour
- 3 tsp. baking powder
- Oil, for frying
- Icing sugar
- Sugar/Cinnamon mixture
Beat eggs with sugar until light and fluffy. Add vanilla and yogurt and mix until well blended. Mix in flour
and beat until all ingredients form a moist batter.
Heat oil in a large, deep frypan to medium high. Drop batter by tablespoonfuls into hot oil.
Cook for minute or two on one side; when golden brown and puffed up, flip over to cook up on the other
side for another minute or so.
Remove doughnuts from pan with slotted spoon to drain on paper towels.
You may dip them into icing sugar, sugar-cinnamon mixture or honey.
