Sauteed Green Beans are an easy dish to prepare on the stove. Of course, this leaves you with precious oven space when you need it most for larger meals. This green bean recipe serves a crowd and quantities can be adapted very easily. Green beans are a cinch to prepare and can remain partially cooked on the stove until you are ready to prepare your meal. At family dinners and holidays, Sauteed Green Beans are a handy and healthy recipe option.
- 4 cups green beans, ends trimmed
- 1-2 tbsp. butter, margarine or olive oil
- 1/4 cup sliced almonds (you can also use walnuts, pecans or pine nuts)
- 2 tbsp. onion or shallots, finely chopped
- 1 tbsp. of your favorite vinegar or lemon juice
- 1/2 tsp. salt
- 1/4 tsp. pepper
Add trimmed beans to a microwave safe bowl and fill the bowl with water, just covering the beans, leaving some room at the top of the bowl for steam to escape. Cover with a lid or plastic wrap. Microwave on high for 6 1/2 minutes, until beans are no longer hard. Drain water from bowl and leave beans partially covered.
In a skillet, turn the stove to medium heat and toast nuts for about 2 minutes until light golden brown. Keep an eye on them to avoid burning. Remove nuts and set aside.
When you are ready to prepare the beans, add butter, margarine or oil to skillet heating to medium high. Add onions, beans and seasonings stirring until ingredients are blended. Add a tbsp. of lemon juice or vinegar to the skillet. Saute for 5-6 minutes until beans are tender and beginning to brown.
A minute or so before serving, stir in the toasted nuts.
Serve immediately. (Serves 6)
Note: In the last minute or two of cooking the beans, you may add a cup of halved cherry tomatoes, a cup of mandarin slices, a handful of pomegranite seeds or a sliced red pepper for added flavour and texture.
