Roasted Asparagus

Roasted Asparagus is an elegant vegetable side dish recipe that can be prepared
very quickly with guaranteed great results. Make this recipe for someone that hates asparagus and believe me, he or she will have a change of heart.
Ingredients:
- 3 tbsp. toasted walnuts or pecans, whole or pieces
- 1 1/2 pounds of asparagus
- 1 small onion, finely chopped
- 2 tsp. olive oil
- 1/4 tsp. salt, or subsitute
- 1/8 tsp. black pepper
- Balsamic vinaigrette, if desired
Preheat oven to 400 degrees F. Grease a large baking sheet. Cut off tough ends of asparagus.
Toast nuts in dry skillet on stove over medium-high until lightly browned. Keep an eye on
the nuts and stir them around. They seem to brown all of a sudden after 2-3 minutes, depending
on whether nuts are whole, halves or pieces.
Once golden brown, remove from heat and set aside.
In a bowl, coat asparagus with onion, oil, salt and pepper.
Spread out spears in a single row on greased baking sheet.
Bake for 6-7 minutes and turn asparagus spears over. Bake for another 6-7 minutes, until lightly browned and tender. Do not overbake - asparagus should
be somewhat crunchy, not mushy.
Serve with splash of balsamic vinaigrette, if desired.
