Potato Latkes - Quick and Easy Recipe

Potato Latkes Recipe:
- 5 medium potatoes, peeled
- 4 tbsp. flour (matzo meal or cake meal at Passover)
- 1 egg
- 1 tsp. salt
- ¼ tsp. pepper
- 1/2 tsp. onion powder
- 1/3 cup oil, for frying
Optional: 1 small finely chopped onion or 1 tbsp. onion flakes
Peel and grate the potatoes, by hand or using a food processor. Do not grate the potatoes too finely - leave them somewhat coarse for a crunchier texture. Once grated, pour out some of the excess water and add egg, flour, salt and pepper. Mix ingredients until incorporated.
Heat oil in skillet to medium/high. Drop tablespoonfuls of latke batter onto hot oil and cook until golden brown on both sides. If necessary, add more oil to your pan. Once crispy and brown, transfer latkes to a platter or baking dish for re-heating.
Serve with sour cream, applesauce or other toppings. Believe me, they are quite delicious just plain.
Yield: 16-20 Potato Pancakes
