Pecan Crusted Fish

Pecan Crusted Fish is a simple recipe that may convert fish skeptics into fans. The addition of pecans to the crust makes all the difference and gives the crust added taste and crunch.

Ingredients:

  • 1/2 cup finely chopped pecans or ground pecans
  • 1 cup bread crumbs
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 eggs, lightly beaten with 1 tbsp. water
  • 6 tilapia fillets (or other white fish fillet such as sole, cod)
  • 1/3 cup oil

Mix nuts, breadcrumbs, salt and pepper together and pour into a baking dish or bowl large enough to allow for coating of fish fillets.

Lightly beat eggs with a tbsp. of water. Fish will be dipped into egg mixture.

Dip each piece of fish into breadcrumb mixture, into beaten eggs, back into breadcrumb mixture for a second coating. Make sure that each fillet is well-coated.

Heat oil in frypan at medium high heat. Brown fish fillets on both sides, turning once, until golden brown.

Serve immediately or later by warming up fillets in oven for 10-15 minutes at 350 degrees F. Garnish with fresh herbs and lemon wedges if desired.
