Onion Soup Potatoes

Onion Soup Potatoes are an easy way to perk up a meal without much fuss or bother. This simple side dish recipe can be prepared in minutes. You don't have to peel the potatoes and the recipe involves assembling a few ingredients in a casserole dish. Not too hard!

Ingredients:

  • 6 medium potatoes, unpeeled
  • 1/2 package of onion soup mix (packet is approx. 1/5 oz.)
  • 1/4 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1/2 cup chicken broth
  • 1/2 cup oil
Preheat oven to 350 degrees F.

Cut up potatoes into bite-sized pieces. Place them into lightly greased casserole dish. Sprinkle onion soup mix and rest of the ingredients over the potatoes. Stir lightly to make sure that ingredients are incorporated. You may sprinkle spices or herbs of choice over the top.

Cover and bake for 25 minutes. Uncover, stir and bake for an additional 20 minutes or until the potatoes become crispy.

You can double the recipe for a crowd.
