Minestrone Soup

Minestrone Soup is a great-tasting, nourishing meal. My friend Cheryl gave me this beef and vegetable soup recipe that she found in one of the excellent cookbooks from the Best of Bridge series. You can add your own touches to this versatile and adaptable recipe - serve with crackers, croutons or fresh bread.
Ingredients:
- 1 1/2 pounds lean minced meat
- 1 cup diced onions
- 1 cup diced zucchini
- 1 cup cubed potatoes
- 1/2 cup diced celery
- 1 cup shredded cabbage
- 1 15 oz. tin tomatoes
- 1/4 cup rice or 1/2 cup macaroni noodles
- 6 cups water
- 1 bay leaf
- 1/2 tsp. thyme
- 2 tsp. salt
- pepper to taste
- 1 tsp. Worcestershire sauce
Brown minced meat in large pot, then drain. Add vegetables, water, and all remaining ingredients. Bring to a boil and sprinkle rice or noodles into mixture. Reduce heat and bring soup to a simmer.
Cover and continue to simmer at least one hour. Slow, steady cooking will produce the best results.
