Easy Fried Rice

Easy Fried Rice is a simple microwave recipe that takes some of the hassle out of preparing dinner. The advantage of this recipe for fried rice over commercial alternatives is the former is not packed with additives and salt. You are in control of what goes into the dish and as such, it is nutritious.

Ingredients:

  • 1 onion, chopped
  • 1 celery stalk, chopped
  • 2 tsp. oil
  • 1 cup long grain white rice or white and wild rice (Uncle Ben's Converted Long Grain White Rice is good for this)
  • 1 3/4 cups water or chicken broth
  • 2 tbsp. soy sauce or your favorite Asian sauce
  • 1/8 tsp. pepper
  • 1/8 tsp. onion powder
  • 1/8 tsp. garlic powder
  • Note: Brown rice will not cook properly using this recipe. For best results, rinse and then cook brown rice on the stove or in the oven according to package instructions.

Combine onion and celery in a 2 quart microwavable dish. Microwave on High, uncovered, for 2 minutes until tender.

Add all remaining ingredients to dish, stir and cover with plastic wrap or lid. Microwave on High for 6 minutes.

Stir lightly and continue to microwave for additional 10-12 minutes at Medium power. Rice is done when all liquid has disappeared.

If your microwave is very "hot" or "strong", you may reduce cooking times.

Remove from microwave and let stand for a few minutes before removing covering.

Stir rice lightly with fork - it will not be sticky.

Serves 4-6.
