Easy Coffee Cake

Rose’s Easy Coffee Cake is a quick and easy cake recipe that makes a light dessert or snack. Feel free to add a handful of chocolate chips, nuts or berries to the batter for added flavor.
Rose loves to make this cake for her grandchildren - they gobble it up before it has a chance to cool off.
Coffee Cake recipe:
- ¾ cup butter or margarine
- 1 cup sugar
- 2 eggs
- 2 cups flour
- 3 tsp. baking powder
- 2/3 cup milk
- 1 tsp. vanilla
Preheat oven to 350 degrees F. Grease a square cake pan.
Beat butter or margarine together with sugar and eggs until smooth and creamy. Add dry ingredients alternating with the milk and vanilla until a smooth batter is formed. Do not overmix. Pour batter into prepared dish.
Topping Ingredients:
- ½ cup butter or margarine, cut into chunks
- 1 ¼ cups flour
- ½ cup brown sugar
- ¾ tsp. cinnamon
In a small bowl, blend ingredients to form a crumb topping. Sprinkle generously over top of cake - it will 'shrink' once baked.
Bake for 45-50 minutes, until toothpick comes out clean.
