Coconut Macaroons

<< Coconut Macaroons are delicious, chewy cookies that are low in fat and calories. They can be served as dessert or a snack on any occasion and are easy to prepare. This recipe takes into account many macaroon recipes found in leading cookbooks and websites. The consistency is rather meringue-like rather than dense and heavy.


Ingredients:

  • 4 egg whites
  • 1 tsp. vanilla extract
  • 1/4 tsp. almond extract
  • 1/8 tsp. cream of tartar
  • 1 cup white sugar
  • 1/4 cup all-purpose flour
  • 1/4 tsp. salt
  • 3 cups flaked coconut

Preheat oven to 300 degrees F. Grease or line a cookie sheet with parchment paper.

In a medium bowl, beat egg whites, vanilla extract, almond extract, and cream of tartar until soft peaks form. Gradually beat in sugar, and whip until mixture is stiff. In a separate bowl, combine flour, salt, and coconut. Gently fold dry ingredients into egg whites.

Drop by tablespoonfuls onto the prepared cookie sheet.

Bake 18 to 20 minutes or until lightly browned. Allow cookies to cool on the baking sheet before removing. Store in an airtight container.
