Cauliflower Soup - Dairy, Pareve or Meat Recipe

Cauliflower soup is low in fat and calories but not in taste. This easy soup recipe will leave you feeling full and satisfied. Feel free to add your favorite herbs to the recipe for added flavor. If you like your soup on the creamy side, go ahead and add a touch of cream, milk or extra butter. If you are watching your calories, stick to water, broth, herbs and spices for added flavoring. As a meat-based soup, you may add chicken soup, chicken soup powder, pareve margarine and a bit of olive oil for added body and flavor.
Ingredients for Cauliflower Soup:
- One head of cauliflower-cut off florets and core
- 4 cups of salted water
- 1 medium onion
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 2 tablespoons of butter, margarine or olive oil
- *chicken soup (or chicken soup powder)to make a ‘meat’ soup
- *skim milk, regular milk, cream (for a ‘dairy’ soup)
- *water or vegetable broth (for a low-fat version)
- 1 cup grated carrots
- 1 cup grated or finely chopped celery
- Optional: fresh or dried thyme, rosemary, basil, curry, whatever you happen to like
Boil the florets in a medium sized pot for about 8-10 minutes. With a slotted spoon,
fill a blender half way with the cauliflower and add a cup of liquid* - either the water from the pot, chicken broth or milk.
Puree the cauliflower until smooth or to your personal taste -
if you prefer a chunkier soup, pulse until it reaches the desired consistency.
If you like a ‘soupy’ consistency, puree until smooth. Remove contents and leave space for the next batch of cauliflower.
Repeat this process with the remaining cauliflower florets adding another cup of liquid. In the second batch, add onion,
margarine or butter, salt and pepper, garlic and onion powder.
Stir in carrots and celery.
Add small amounts of liquid until you achieve the soup-like consistency of your choice.
You may serve this soup with chives or fresh dill as a garnish.
