Carrot Soup Recipe - Pareve or Meat

This soothing carrot soup recipe is the perfect comfort food dish to serve on cold winter nights or anytime that you feel like having something healthy and flavorful.

Ingredients for Carrot Soup:

  • 1 onion, chopped
  • 8-10 carrots, peeled and sliced
  • 4 potatoes, peeled and sliced (optional)
  • 2 tbsp. margarine or oil
  • 4 cups chicken or Vegetable Broth
  • salt and pepper, to taste
In a Dutch oven, sauté the onion in the margarine or oil until translucent. Add carrots and potatoes. Cover with chicken broth. Simmer for 30 minutes. You may serve the soup as is, mash or puree.

To create a smooth soup, you can use an immersion blender in the Dutch oven or transfer ingredients to a blender or food processor. Process until smooth. Add salt and pepper to taste. Add freshly chopped or dried herbs of choice(thyme, dill, coriander, basil) and your favorite spices, to taste.

Note: you can use this method to make many different vegetable soups. Turnips, parsnips and even cauliflower can be combined with the potatoes and onion to create a smooth, soothing soup using the chicken broth as a base.
