Zucchini Corn Medley in a Skillet

Zucchini Corn Medley is a colorful vegetable recipe that is full of great texture and flavor. It takes only minutes to prepare and makes a wonderful side dish at barbecues. The recipe can be adapted to your own taste preferences.

Ingredients:

  • 6 medium zucchini
  • 3 ears of fresh corn or 1 3/4 - 2 cups frozen corn kernels
  • 3 tbsp. olive oil
  • 1 tbsp. vinegar (wine, balsamic, your favorite type), if desired
  • Salt and pepper, to taste
  • 1/4 tsp. paprika
  • 3/4 cup chopped green onions
  • 3 tbsp. fresh flatleaf parsley, chopped
  • If desired, add 1/2 cup chopped red pepper or cherry tomatoes (halved) to the vegetable mix
Trim off ends of zucchini and cut into round slices, not too thick. Cut the kernels off of the corn.

Heat oil in a large skillet to medium high. Place zucchini in skillet and season with salt and pepper to taste. Add paprika. Stir for 2-3 minutes. Add corn and scallions to the pan and blend all ingredients. Continue to saute mixture for another 2-3 minutes.

Sprinkle with fresh parsley and stir. Serve immediately.
