Wild Rice Recipe - Casserole Recipe with Nuts, Veggies, Cranberries

This attractive Wild Rice Recipe is filled with beautiful colors, textures and a variety of flavors that will please your taste buds. It is delicious hot or cold and can be adapted to include your favorite ingredients. The addition of nuts and dried fruit to white and wild rice takes an otherwise ordinary side dish to new heights. If desired, replace the cranberries with chopped apricots, dates or another fruit of choice. The addition of your favorite herbs or grated citrus zest can also be considered. This rice recipe is worth saving and also makes a terrific pot luck recipe.
Ingredients for Rice:
- 1 cup Long Grain and Wild Rice, not from a mix
- 2 1/2 cups water, chicken broth or vegetable broth
- 1 tsp. salt
- 1 tsp. margarine or oil
For best results, rinse rice in lukewarm water and drain to remove excess starch. Bring water to a boil. Add rice and rest of ingredients. Cover the pot and reduce heat - simmer
rice for 25 minutes until all liquid is absorbed. Remove rice and set aside.
Remaining Ingredients in Wild Rice Recipe:
- 3 tbsp. oil
- 1 large onion, finely chopped
- 1 large carrot, finely chopped
- 2 celery stalks, finely chopped
- 2 cloves garlic, minced or 1/4 tsp. garlic powder
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/2 cup dried cranberries (soak in warm water for 5 minutes and then drain)
- 1/2 cup walnuts or pecans, lightly toasted*
- 1 tbsp. dried herbs (choose your favorite: thyme, oregano, basil, parsley, rosemary)
Heat oil in a large skillet to medium high. Saute onion, carrots, celery, garlic, salt and pepper, until vegetables are
soft, for about 3 minutes.
Turn heat down to low-medium. Add the cooked rice to the pan and stir. Blend in the nuts, cranberries and herbs to the pan, stirring until
all ingredients are incorporated - about 2-3 minutes.
Remove from heat and serve. You may also let the rice cool off and
transfer it to an airtight container to be refigerated for later use.
*Toast the nuts in a dry frypan on the stove over medium heat for about 5 minutes. Do not leave them
unattended because they brown very quickly during the final minute or two.
Serve Wild Rice with Vegetables with chicken, beef, fish, tofu or by itself - an appetizing presentation!
