Wild Rice Casserole with Chinese Vegetables

<< Wild Rice Casserole is the simplest rice recipe you can imagine. The use of canned ingredients and dry onion soup mix make this a truly quick and easy recipe, particularly for those of you without free time on your hands. Once you have assembled the ingredients, most of the work is done. Just bake and eat!

Ingredients:

  • 2 cups wild rice, or white and wild rice
  • 1/4 cup oil
  • 1 package dry onion soup mix (approx. 1/5 oz.)
  • 3-4 tbsp. soy sauce
  • 1 pepper, chopped
  • 1-8 oz. tin water chestnuts
  • 1-10 oz. can sliced mushrooms
  • 1-8 oz. can bamboo shoots
  • 3 1/2 cups chicken broth or water
  • Salt and pepper, to taste
If using wild rice alone, rinse well in water and drain. Do not drain canned ingredients.

Combine all of the ingredients in a casserole dish. Bake covered for one hour at 350 degrees F. Enjoy and serve with main course.

Garnish with freshly chopped scallions.
