Whitefish Salad

Whitefish Salad is simply amazing! This is the tastiest spread or topping found in any brunch recipe collection. It is hard to believe that
something this savoury is so easy to prepare. Whitefish Salad is appetizing as a topping on crackers, as a spread
on a bagel or even as a salad filling for endive or lettuce leaves.
Ingredients:
- 1 - 1 ½ lb. Smoked whitefish - remove all bones and visible skin
- ½ cup mayonnaise
- 1/3 cup diced celery
- 1/3 cup diced onion
- 1/3 cup finely diced red pepper
- 1-2 tablespoons of chopped fresh dill or other herb of choice
- salt and pepper to taste
Place fish in the food processor and pulse or process low until chunky but not too fine.
Remove fish and place in a mixing bowl. Add remaining ingredients
blending well. Season to desired taste and add dill or herbs.
Refrigerate for at least an hour and serve cold.
