Vegetarian Chopped Liver
Vegetarian Chopped Liver is an easy appetizer recipe that I came across at an interesting blog called 'Marianne's Motifs'. Serve the 'liver' with a salad,
Pita Crisps, crackers or beside the real thing. It makes a delicious spread for guests.
Ingredients:
- 3 tbsp. olive or canola oil
- 3 cups chopped onion
- 2 cups cashew pieces
- 1 lb. bag of frozen string beans (or green beans)
- 2 tbsp. fresh lemon juice
- Salt & pepper to taste
Heat oil in large saute pan, add onions & cook slowly until caramelized and deep brown.
Toast cashews on a baking sheet at 350 degrees F until they smell toasted and are slightly golden brown.
Be careful not to overcook the cashews.
Steam or cook string beans as directed on the package until well done and tender. Drain them.
Combine all ingredients in a food processor or blender. Process/blend until smooth. Taste - add salt and pepper as desired.
Refrigerate for days or freeze.
