Fruit Tzimmes - Sweet Baked Carrot Stew

Fruit Tzimmes is one of my favorite Jewish recipes served at family and holiday meals. It adds a distinctly pleasing element to a savoury meat meal with the added bonus of vitamins and fibre content (just forget all of the sugar!)
Ingredients:
- 2 large sweet potatoes, peeled and cut into chunks
- 8-10 carrots, peeled and chopped, not too thin
- 1 cup pitted prunes, halved (soak in hot water for 5 minutes)
- 2-3 tbsp. lemon juice
- 1/2 tsp. salt
- 1/2 cup brown sugar
- 1/2 tsp. ground ginger
- 1/4 tsp. cinnamon
- 1 tbsp. cornstarch or potato starch, if desired
Bring water to a boil in a large pot and add the carrot and potatoes. Simmer for about 15 minutes until tender.
Drain water and pour potatoes, carrots and prunes into a large bowl. Handle sweet potatoes carefully so that they do not become mushy. Stir in remaining ingredients. If the mixture is too watery, add the cornstarch or potato starch.
Pour mixture into lightly greased casserole and bake covered at 350° for 30 minutes, until tender.
