Marinated Tomato Salad

Marinated Tomato Salad can be made with any variety of ripe tomatoes - when tomatoes are in season, this simple salad or side dish is a refreshing, delicious treat.
Ingredients:
- 6-8 ripe tomatoes (beefsteak, rose - your favorite variety)
- ¼ cup red wine vinegar (balsamic, raspberry or apple cider can be used)
- 1/2 cup olive oil
- 1 tsp. dry mustard
- 1/2 tsp. garlic powder or 1 clove of fresh garlic, minced
- 1/2 tsp. pepper
- 2 tbsp. finely minced shallot, if desired
- Fresh herbs
Slice tomatoes to a thickness of about ¼ - ½ inch and place in a container. In a separate cup, whisk together the oil, vinegar, mustard, garlic powder, pepper and shallots. Pour marinade over the tomatoes. Refrigerate for one hour and serve with fresh or dried herbs as a garnish.
Note: To create a delicious salad, add slices of your favorite cheese in between each tomato slice and top with fresh basil.
