Tomato Pasta Sauce - Ready in 30 Minutes

Tomato Pasta Sauce is a popular pasta topping because it makes a nutritious, lowfat topping for noodles, grains, vegetables, fish, meat or eggs. You can spice it up with your favorite seasonings and enjoy it fresh or from the freezer.

Tomato Sauce Recipe:

  • 1 tbsp. oil
  • 2 large garlic cloves, minced (or 1/2 tsp. garlic powder)
  • 1/2 cup chopped onions
  • 1/2 cup green pepper, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup chopped carrots (1 medium)
  • 1 can (28 oz.) crushed tomatoes
  • 2 tbsp. tomato paste
  • 1 bay leaf
  • 1 tsp. oregano
  • 1 tsp. basil
  • 2 tsp. sugar
  • 1/4 tsp. black pepper
  • Salt, to taste
  • Pinch of red chili pepper, if desired
In a large saucepan, heat oil and saute garlic, onions, green pepper, celery and carrots until softened, 8-10 minutes. Add tomatoes, tomato paste and all seasonings, stirring ingredients to blend well.

The best way to make tomato sauce is to let it simmer uncovered, stirring every few minutes. If you find that your stove becomes a messy, spattered pattern of tomato sauce stains, partially cover the saucepan, leaving lid slightly ajar to allow steam to escape and sauce to thicken. Simmer on low for 30 minutes. Don't forget to stir. If sauce seems too watery, stir in an extra tablespoon of tomato paste.

Discard bay leaf. You may puree the sauce in processor, blender or with an immersion blender. If desired, add cheese.

This easy sauce recipe freezes well - you can double or triple quantities.
