Tofu Cheese Pie

Tofu Cheese Pie is a great alternative to desserts made with cream cheese because it is pareve. Of course,
there are numerous health benefits to tofu-based products in addition to the absence of milk. Feel free to
make additions to this simple pareve dessert recipe to enhance the flavor of the tofutti - tofu products generally absorb the
flavors added to them.
Ingredients for Tofu Cheese Pie:
- 1 container Tofutti cream cheese
- 2 eggs, separated
- 1 tsp. vanilla
- 1 tbsp. lemon juice
- Zest of 1/2 lemon
- 1/2 cup sugar
- 1 cup flour
- 1 prepared piecrust*
Beat egg whites until stiff while gradually adding the sugar.
In a separate bowl, beat the egg yolks, tofutti cream cheese, lemon juice and flour. Beat until smooth.
Gently fold in egg white mixture to cheese mixture.
Pour batter into pie crust.
Bake for 30 minutes and check for doneness. When centre is firm and a toothpick comes out 'clean',
remove pie from oven and cool.
*If desired, you can prepare the recipe to be served in small tart shells - reduce baking time accordingly.
Garnish pie with fruits, creams, chocolate shavings, sprinkles or even paint on a light glaze of melted
preserves.
You may experiment with this recipe and substitute brown sugar for white sugar, add a touch
of maple syrup or even a melted square of dark baking chocolate to achieve desired flavor.
