Tilapia Packets

Tilapia Packets are a quick and simple fish recipe. They take a couple of minutes to prepare and only about 15 minutes to bake in the oven. Aside from convenience, tilapia packets are lowfat and nutritious.

Ingredients:

  • 4 tilapia fillets (4 to 6 oz. each)
  • 1 tsp. dried oregano
  • Salt and pepper to taste
  • 1 pint cherry or grape tomatoes, halved
  • 1 large zucchini, cut into strips or bite-sized pieces
  • 1 cup sliced mushrooms
  • 1/2 cup black olives
  • 4 tsp. olive oil or butter
  • Parchment paper or aluminum foil

Preheat oven to 400 degrees F. You will need a large cookie sheet.

Arrange four large squares (12-15" each) of parchment paper or tin foil on the counter. Make sure to use a large enough piece of foil or paper, particularly if this is your first time making a packet.

Place one tilapia fillet on each sheet, just off centre, to allow you enough room to fold the paper over the fish later on. Sprinkle fish with salt and pepper, to taste. Place 1/4 of the vegetables on top of each fish fillet. Top each fish packet with one tsp. of butter or oil.

Fold over 'larger' side of paper or foil to cover fish and vegetable mixture. If you are using foil, fold up top and bottom sides with a few folds to secure packet. If you are using parchment paper, start at top corner and make small folds, almost 'rolling' paper over and move your overlapping folds down the length of the packet to seal it all over.

Place packets on a cookie sheet and bake for 15 minutes.

Remove from oven and serve on dinner plate in packet, cutting a slit to allow for steam to escape. You may also remove contents from packet and serve. Makes 4 servings.
