Tabouli Salad

Tabouli is made with cooked bulgur or cracked wheat and can be served as an appetizer, side dish or light salad. This easy recipe is the nutritious and tasty sum of its fresh ingredients that include lemon juice, parsley and a variety of vegetables. Keep a container of this fabulous salad in the fridge at all times.

Ingredients:

  • 1 cup bulgur
  • 2 cups boiling water
  • 1/2 large cucumber, peeled and diced
  • 2 cups diced plum tomatoes
  • 1/2 cup diced red onion
  • 3 tbsp. olive oil
  • 3 tbsp. fresh lemon juice or vinegar
  • 1/2 tsp. salt (or, to taste)
  • 1/4 tsp. pepper (or, to taste)
  • 2 cloves garlic, minced
  • 2 cups fresh flat leaf parsley, chopped
Place bulgur in a bowl and pour boiling water over top. Let it soak for 30 minutes until water is absorbed. Drain bulgur to remove any excess water.

In a separate bowl, add cucumber, tomatoes and onion.

Combine olive oil, lemon juice, salt, pepper and garlic. Pour over vegetables and toss. Fold in drained bulgur and toss all ingredients. Stir in parsley. Chill for at least an hour before serving.

Serve with pita, lettuce and vegetables or as side salad for chicken or fish.

Yield: approximately 6 cups
