Scrambled Egg Rollup - Treat Yourself!

A Scrambled Egg Rollup is a easy way to serve Salami and Eggs or any
other vegetarian or dairy scramble at a brunch, as an appetizer or even as a dinner recipe. You may use puff pastry or frozen bread dough that you have thawed
out in the fridge. This easy scrambled eggs recipe can be prepared for a few people or a larger crowd - adjust the size of the pastry
and other ingredients accordingly.
Ingredients:
- 1 package puff pastry
- 1 1/2 - 2 cups cup pizza sauce (or your favorite tomato sauce)
- One recipe, Salami and Eggs
- 1 egg, lightly beaten (to brush over pastry)
- Sesame, poppy seeds, to sprinkle over top of pastry
Note: You may use smoked meat instead of salami for a meat scramble; a veggie scramble or
one that includes cheese can be made for a dairy dish.
Preheat oven to 350 degrees F. Lightly grease a large cookie sheet.
Defrost the puff pastry dough according to package instructions. Use a rolling pin to roll the pastry into a rectangle -
not too wide or the slices will be hard to handle. Roll out the dough to desired thickness, not too thin. Spread a layer of pizza sauce all over the pastry, leaving 1/2" border all around. Add a layer of salami and eggs - be
generous. Fold the dough over in half lengthwise and pinch the edges closed, dabbing them with
water or egg wash to make sure that there is a tight seal. You may make a couple of slits on top of
the loaf to allow steam to escape during baking.
Transfer to a lightly greased cookie sheet. Brush top with beaten egg and sprinkle with sesame and/or poppy
seeds.
Bake for 25-30 minutes until golden brown. Cut into slices and enjoy!
