Sauteed Tomato Recipe

This simple Sauteed Tomato Recipe is a flavorful dish that can be prepared in less than five minutes. This easy tomato recipe adds colorful texture and nutritional appeal to everyday meals, even during Passover. Feel free to alter the quantities listed below.

  • 2 pints cherry or grape tomatoes, rinsed and dried
  • 3 tbsp. olive oil (reserve 1 tbsp. for later)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. garlic powder (or fresh, minced garlic if you prefer)
  • 2 tbsp. fresh chopped basil or 1 tbsp. dried basil
  • 1 tsp. dried oregano
  • Splash of balsamic, red wine or apple cider vinegar

Prepare this recipe close to the time that you will serve it. Heat 2 tbsp. of oil in a non-stick skillet at a medium to high heat. Add the tomatoes, salt and pepper, while moving the tomatoes around the pan. Add garlic powder and herbs continuing to saute the tomatoes until you see the skin begin to brown and shrivel slightly - this will take about 2 - 3 minutes. Do not overcook the tomatoes or they will become mushy. Remove skillet from the heating element and add a splash of wine or balsamic vinegar plus the remaining tablespoon of oil to the tomatoes. You can garnish the dish with fresh parsley or basil leaves if you like. Sauteed tomatoes can be served at Passover.

Note: if desired, add 2 tbsp. of finely chopped red onion or shallots to the tomatoes in the skillet for extra bite and flavor!
