Salmon Patties

Salmon Patties are a flavorful, comforting fish recipe. Use up leftover cooked salmon to create these tasty patties that make a light meal at home or easy packed lunch to take to work.

Ingredients:

  • 1 lb. cooked salmon (skin/bones removed) or 2 cans (approx. 7.5 oz. each)
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/2 cup flour
  • 1/4 tsp. baking soda
  • 1/2 medium onion, grated or diced (or 2 tbsp. onion flakes)
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1 tsp. parsley flakes
  • 1/4 cup oil, for frying
Combine all ingredients, except oil, and mix well. Form into patties.

Heat oil in frypan at medium high heat. Place patties into hot oil and brown on both sides, until golden brown. Drain on paper towels before serving.

Makes approximately 10 patties.
