Roasted Pear Salad

Roasted Pear Salad is an elegant and delicious salad or appetizer recipe that can be prepared without too much
fuss. The recipe instructions can be adapted to your own tastes and the amount of salad that you
need. Thank you to Cheri Bell for this terrific recipe.
Ingredients for Roasted Pear Salad:
- 8 firm pears (Bosc, if possible)
- Juice of 1/2 lemon
- Olive oil, enough to drizzle over pears
- Fresh chopped mint or chives, to sprinkle over salad
- 1-2 packages Mixed European Greens salad mixture
- 1 cup seedless red grapes (halved)
- 3/4 cup - 1 cup toasted walnuts, pecans or almonds
- Optional: crumbled Blue Cheese or Stilton to top the salad
Peel and core the pears. Slice pears into sections - about 8 sections
per pear, trying to keep pieces uniform in size. Lay out pears flat on a baking sheet.
Drizzle lemon juice over top of pears, followed by light drizzle of olive oil. Lightly sprinkle pears
with cinnamon and if desired, mint.
Bake for 20 minutes. Check for doneness after 15 minutes - size of pears and moisture may shorten baking time.
When pears are lightly browned, remove from oven. Prepare Vinaigrette Recipe below.
Vinaigrette ingredients:
- 1/3 tbsp. balsamic vinegar (white or dark)
- 1 tbsp. dijon mustard
- 1 tbsp. honey, or to taste
- 1 cup olive oil
- 2-3 tbsp. plain yogurt, if desired
- Salt, pepper, to taste
- If desired, add a pinch of freshly chopped or dried chives or parsley, to taste
- Optional: add 2 tbsp. of orange, pear or pineapple juice
Whisk together vinegar, mustard and then honey. Slowly add the oil to the mixture, whisking to combine. Add the remaining ingredients, one at a time, to taste.
In a large bowl or on individual salad plates, lay out salad greens. Top with pears, grapes, nuts and if desired, crumbled cheese. You may sprinkle cinnamon or mint over top of salad.
Drizzle dressing over Roasted Pear Salad just before serving.
Serves: 8
Note: To make this a pareve salad, omit cheese and replace yogurt with kosher (pareve) mayonnaise.
