Ricotta Grape Bruschetta

Ricotta Grape Bruschetta is an easy appetizer or brunch recipe that can be prepared in minutes. If you are making brunch on Mother's Day, this recipe may come in handy. If you wish, feel free to substitute some of the spices and flavorings with your own favorites.
Ingredients:
- 1 cup red seedless grapes
- 1 cup green seedless grapes
- ¼ tsp. cinnamon
- 1/8 tsp. grated nutmeg
- Pinch of ground cloves, if desired
- 1/8 tsp. almond or vanilla extract, if desired
- 1 cup part-skim ricotta cheese
- 1 tbsp. minced candied ginger (you may substitute candied citrus peel, finely chopped dried fruit, finely chopped candied pineapple, cherries)
- 1 tbsp. chopped walnuts
- 1 large baguette, cut into 16 slices (you can also use English muffins, mini-bagels, rusks or endive leaves)
- Garnish: extra grapes (halved) or mint leaves
Use a food processor and pulse red and green grapes only until chopped or chop by hand. Drain excess liquid.
Transfer grapes to a bowl and sprinkle with cinnamon, nutmeg, cloves and extract. Stir to blend.
Place ricotta, ginger and walnuts into another bowl - stir to blend. Toast baguette slices.
Spread 1 tbsp. of the ricotta mixture onto each bread slice. Top with a spoonful of the grape mixture. Garnish with mint or halved grapes.
Serves: 4-6
