Rice Salad with Coleslaw

Rice Salad with Coleslaw is an easy, nutritious salad recipe that you can serve as a side salad, appetizer or pack up and take to work for lunch. Feel free to add your favorite nuts, seeds and fruits for added flavor.
Ingredients:
- 2 cups coleslaw mix (you can also use broccoli slaw mix)
- 2 cups cooked brown or white rice
- 1 orange or apple, peeled, seeded and chopped
- 1/3 cup frozen orange juice concentrate, thawed
- 1/3 cup regular or reduced fat mayonnaise
- 1 tsp. sugar
- ¼ tsp. salt
- ½ cup chopped walnuts or pecans, toasted
- Optional: sunflower seeds, sesame seeds, dried cranberries, raisins or other dried, chopped fruits, pinch of your favorite herbs or spices
In a large bowl, combine coleslaw mix, rice and orange or apple. In a separate bowl, mix together orange juice concentrate, mayonnaise, sugar and salt. Pour over the coleslaw mixture and toss until coated. Add nuts, cover and refrigerate until serving.
Serves: 4 (you can double the recipe)
