Raspberry Bars

Raspberry Bars are a tasty snack or dessert for Passover. I came across this very easy recipe a year ago in a magazine, have read variations in cookbooks and found it again this year on the net at www.bhg.com. Easy and delicious – a good bet.
Ingredients:
- 1 cup Passover margarine or butter (2 sticks)
- 2 large egg yolks
- 1 cup sugar
- 2 cups cake meal
- 2 tsp. grated lemon zest
- 1 tsp. vanilla (you can also use almond extract)
- ¼ tsp. salt
- 1 ½ cups raspberry or apricot jam
- ¾ cup chopped walnuts or sliced almonds
Preheat oven to 325 degrees F. Grease a 13x9x2-inch baking pan.
Beat margarine and sugar on medium speed until light and fluffy. Add egg yolks and continue beating until well combined. Add lemon zest, vanilla, and salt. Beat in cake meal on low speed only until incorporated.
Press two-thirds of the crust (reserve 1/3 for topping) at the bottom of the prepared pan. Bake in center of oven for 20 minutes. Remove from oven and spread jam evenly over baked crust. Sprinkle walnuts on top of jam. Drop bits of reserved crust evenly over walnuts.
Return to oven and bake for 30 minutes – topping should turn light golden brown. Cool and cut into squares. Serve or wrap up and freeze.
Yield: 12-16 bars
