Ramen Noodle Salad

Ramen Noodle Salad is an easy salad recipe that makes a light meal, starter or side dish. Feel free to add or substitute your favorite vegetables
and nuts. This is the type of salad that turns a salad 'hater' into a salad lover!
Ingredients for Ramen Noodle Salad:
- 1/2 package of coleslaw mix
- 1/2 medium red onion, diced
- 2 stalks celery, chopped
- 1/2 cup cashews, unsalted are preferable
- 1/2 cup raisins (or dried cranberries)
- 1/2 red pepper, chopped
- 1 cup sliced mushrooms
- 1 can mandarin oranges, drained
- 1 package ramen noodles*
In a salad bowl, combine all ingredients except for the ramen noodles. They will be prepared
and added to the salad later. Prepare the dressing below by blending together first 4 ingredients and whiskiing in the oils slowly, until well blended. Pour dressing over salad and toss lightly.
Dressing:
- 2 tbsp. soya sauce
- 1/4 cup sushi or rice vinegar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 cup salad oil
- 1-2 tsp. sesame oil (add oil, to taste)
*Ramen noodles: Gently crumble the dry noodles and put into a separate bowl. Add boiling water and
soak noodles for about two minutes (al dente) and drain well, rinsing with cold water.
Once cooled, add to salad - gently toss to incorporate.
Refrigerate until salad is chilled and serve.
Serves 4-6. Recipe can be doubled.
