Quinoa with Caramelized Onions and Raisins

Quinoa with Caramelized Onions and Raisins is a high protein recipe that can be served as a light, nutritious meal. It is worth noting that this is not a grain dish - the little round discs are seeds. As far as cooking liquid is concerned, clear broths, water, with a bit of juice, or even beer as suggested below are great choices.

If you are wondering whether this dish is considered ‘kitniyot’, ask your Rabbi or consult your local Vaad to determine whether it is acceptable during Passover.

Ingredients:

  • 2 tbsp. olive, canola or Passover oil
  • 3 large (about 2 lbs.) sweet white onions, halved and thinly sliced
  • 1/2 tsp. light or dark brown sugar
  • 1-1/2 cups uncooked quinoa that has been rinsed well in cold water
  • 3 cups broth, beer (not at Passover) or water, or a combination
  • 1 cup golden raisins (you may plump raisins a bit by soaking them in warm water)(dried cranberries or cherries are also delicious)
  • 1/2 tsp. dried tarragon leaves (thyme, basil or oregano are also good)
  • Salt and pepper, to taste
  • Pinch of onion and garlic powder, if desired
Heat oil in a large, heavy skillet over medium-low heat. Add onions and brown sugar. Cook uncovered, stirring occasionally, until onions are very soft and golden brown, 25 to 35 minutes.

Sprinkle quinoa over onions and cook over medium-high heat until quinoa begins to toast and pop. Pour liquid over and stir - cover and cook over low heat for 15 minutes or until liquids are absorbed. Remove from heat and keep covered for additional 10 minutes. Stir in raisins and herbs.

Add salt and pepper to taste.

Serves: 6-8
