Purim Kichel
Purim Kichel are delicious cookies shaped like triangles to remind us of Haman’s three cornered hat. This recipe yields 4-5 dozen cookies, a perfect addition to your misloach manot - Purim baskets. Other additions could include Stuffed Dates and Hamantashen.
Ingredients:
- 1 cup sugar
- 1 cup oil (or melted butter or pareve margarine)
- 4 eggs
- 4 cups sifted flour
- 3 tsp. baking powder
- ½ tsp. salt
- ¾ cup poppyseeds (you can use ½ cup, if desired)
- ¾ cup lukewarm water or milk
Preheat oven to 375 degrees F. Line a cookie sheet with parchment paper or coat with cooking spray.
Cream sugar and oil. Add 1 egg at a time, beating well after each addition. Sift dry ingredients and add poppyseeds. Add dry ingredients to wet mixture, adding the liquid a bit at a time, until you make a stiff dough.
Roll out dough on lightly floured surface or on parchment paper to ¼” thickness. Use a triangular shaped (fluted) cookie cutter or pizza cutter to cut dough into uniformly sized pieces, about 2 inches each. You can also cut dough into squares and then fold each square in half to form a triangle.
Brush kichel with egg wash. You can either sprinkle cookies with a few poppyseeds or dip one side in sugar for a crunchy coating. Place (sugar side up) on prepared cookie sheet.
Bake for about 10 minutes until golden brown. Bake for a few additional minutes if necessary.
Makes: 4-5 dozen, depending on size of cookies
