Oven Roasted Portobello Mushrooms

Roasted Portobello Mushrooms are a healthy vegetable dish that absorb the flavors of the herbs and spices sprinkled on them. They have a meaty quality that satisfies intense hunger especially when trying to cut back on calories. Munch on them right out of the oven, served in
an attractive green salad, stuffed or sliced and served over pasta, with a bit of parmesan. Oven roasting helps the mushrooms to caramelize, similar to grilled mushrooms off the barbecue. They are low in fat and calories and satisfy most hungry appetites.
Ingredients:
- 4 medium Portobella mushrooms, wiped clean
- 2 tbsp. olive oil
- 2 large garlic cloves, minced
- 2 tsp. soy sauce (wine vinegar can also be used)
- 1/8 tsp. pepper
- 1/2 tsp. oregano
Preheat oven to 400 degrees F. Remove stems of mushrooms.
Combine mushrooms with all remaining ingredients in a bowl. Stir carefully, coating mushrooms thoroughly with the oil and soy liquid mixture. Add a bit more oil if necessary.
Place mushrooms on a greased baking sheet, stem side up. This way, the smooth, meaty surface will brown.
Bake for 10-12 minutes and remove from oven, once browned and hot. (Note: If it is your first time
making this dish, keep an eye on the mushrooms while they bake to avoid overcooking.)
Serve immediately.
Note: You can use this method to roast most types of mushrooms, even oyster mushrooms. Make sure
to reduce cooking time for oyster mushrooms because they are so thin. They should be ready in just a
few minutes.
