Pomegranate Green Salad

Pomegranate Green Salad is a colorful alternative to a drab side salad. The zesty ingredients are colorful and full of exciting flavors. This salad recipe can be adapted to suit your own tastes: add a pinch of garlic powder, cayenne, red pepper flakes, chopped herbs, the choice is yours.

Ingredients:

  • 5 tsp. vinegar (cider or wine) (you may substitute lemon juice, if desired)
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 1/4 cup olive oil
  • 4-5 cups mixed greens of your choice
  • 1/4 cup green onions, chopped (add more if desired)
  • 2 oranges, peeled and sliced
  • 2 kiwis, peeled and sliced
  • 1 medium pomegranate, seeded (just over 1/2 cup)

Whisk together the first four ingredients to make a light dressing. Toss half of the dressing with the greens and onions. Place oranges and kiwis on top of greens. Add rest of dressing and toss lightly. Sprinkle salad with pomegranate seeds.

Optional: add a touch of grated fresh or pinch of powdered ginger

Serves 6 as an appetizer or side salad.
