Passover Strawberry Tarts

Passover Strawberry Tarts make a delicious dessert recipe for the holiday. This is not an easy recipe because the method of preparing the strawberry cream filling takes a bit of effort . Read the recipe and take note of the Shells – you can make them and replace the strawberry filling with a simple Passover pudding or cheesecake filling, if desired. For that matter, simply spoon in your favorite cut-up fresh fruit and combine with a bit of preserves, whipped topping, ice cream, sorbet or cottage cheese. The filling below is delectable and elegant – if you have a few minutes to spare, give it a try – you won’t be sorry.
Ingredients for Shells :
- 1½ cups matzoh meal
- 2/3 cup melted butter
- 3 tablespoons sugar
- ¼ tsp. salt
- 1½ tsp. cinnamon
Combine matzoh meal with melted butter, sugar, salt and cinnamon. Place paper baking cups in medium-size muffin pan. Press heaping tablespoon of this mixture into bottom and sides of each baking cup. Bake in moderate oven for 15 minutes or until well browned. Cool thoroughly in pan before removing.
Ingredients for Filling:
- ¼ cup potato starch
- 1½ cup sugar
- 3 eggs
- 1-16oz. container sour cream
- ¼ tsp. salt
- 1 tablespoon butter
- 6 tablespoons lemon juice
- 1 cup sliced strawberries that have been sprinkled with a bit of sugar
Combine potato starch and sugar. Beat eggs and sour cream together. Combine both mixtures in top of double boiler. Add salt and butter. Cook, stirring constantly over boiling water until thickened (about 5 minutes). Then cook 15 minutes longer until very thick, stirring occasionally. Cool, add lemon juice and mix well. Spoon a little of this mixture into each tart shell. Place a layer of Strawberries on top. Add remaining filling and decorate as desired.
