Passover Rocky Road Squares

Passover Rocky Road Squares will please most children and adults during the holidays. You can serve them plain, dusted with Passover confectioner's sugar or frosted, using the Chocolate Frosting recipe below. Pareve or dairy, depending on whether you use butter or margarine.
Ingredients for Passover Rocky Road Squares:
- 1/2 cup unsalted butter (1 stick) or margarine, softened
- 1/2 cup white sugar
- 1/4 cup brown sugar
- 2 eggs
- ½ cup matzo meal
- 2 tbsp. potato starch
- 1/4 cup cocoa
- 1/2 tsp. Passover baking soda, optional
- 1 cup chocolate chips
- 1/2 cup chopped pecans or walnuts
- 1/2 cup miniature marshmallows
Preheat oven to 350°F. Generously grease an 8” square baking pan.
Cream together butter and sugars. Beat in the eggs. Stir in matzo meal and potato starch. Carefully stir in the cocoa until evenly distributed. Fold in chocolate chips, nuts and marshmallows.
Transfer dough to prepared baking dish and spread evenly. Drop pan on counter once or twice to get rid of air pockets.
Bake for 25-30 minutes on middle rack of oven. Centre of brownies should be soft, not raw and edges solid. Do not overbake.
Remove from oven and cool before cutting into slices. You may frost brownies with icing recipe below:
Chocolate Frosting:
- 1/2 cup (heaping) chocolate chips, melted
- 1 tbsp. softened butter or margarine
- 1/8 tsp. milk or water
Blend melted chocolate chips with softened butter or margarine and water in a small bowl and mix well. Spread over completely cooled brownies.
Makes: 12-16 squares
