Passover Muffins

<< Passover Muffins are very easy to prepare and make a great snack during the holiday.

Ingredients:

  • 3 eggs, separated
  • ¾ cup sugar
  • ½ cup oil
  • ¼ tsp. salt
  • ¼ cup potato starch
  • ½ cup cake meal
  • 1 cup blueberries, raspberries, raisins, or chocolate chips
Preheat oven to 325 degrees F. Fill muffin tins with paper liners.

In a large bowl, beat egg yolks until fluffy and add rest of ingredients, except for fruit, one by one, beating after each addition.

In a separate bowl, use clean beaters to beat egg whites until soft peaks form. Gently fold egg whites into batter followed by fruit, blending only until incorporated.

Spoon batter into muffin cups. If desired, sprinkle cinnamon/sugar over tops of muffins.

Bake for 40-45 minutes in centre of oven. Test centre of muffins with toothpick and remove from oven. Cool and serve.
