Passover Meringue Cookies

<< Passover Meringue Cookies also known as ‘Nothings’, are chewy cookies made with stiffly beaten egg whites and flavorings to suit your own tastes. They are as light as a feather and make a great dessert or snack, especially when you are feeling a bit loaded down after heavy meals. A very traditional Passover favorite.

Ingredients for Passover Meringue Cookies:

  • 4 egg whites, room temperature
  • 1/8 tsp. salt
  • 1/4 cups sugar
  • 1 tsp. Passover vanilla extract or vanilla sugar for Passover (Passover almond extract can also be used)
  • ˝ cup chocolate chips (or, bits of chopped, toasted almonds)
Preheat oven to 300°F. Grease or line two cookie sheets with parchment paper.

Beat egg whites at medium speed together with salt, for one minute. Slowly add sugar a bit at a time, and increase mixer speed to high. Add vanilla while you beat. Continue beating mixture for another two minutes until stiff peaks form.

Gently fold in chocolate chips with a spatula. Using a teaspoon, drop batter onto cookie sheet keeping 1” between meringue cookies. Bake until they turn a light golden color, for 25-30 minutes. Cool cookies and remove from cookie sheets.

Makes: Approximately 2 dozen
