Passover Meringue Cookies

Passover Meringue Cookies also known as ‘Nothings’, are chewy cookies made with stiffly beaten egg whites and flavorings to suit your own tastes. They are as light as a feather and make a great dessert or snack, especially when you are feeling a bit loaded down after heavy meals. A very traditional Passover favorite.
Ingredients for Passover Meringue Cookies:
- 4 egg whites, room temperature
- 1/8 tsp. salt
- 1/4 cups sugar
- 1 tsp. Passover vanilla extract or vanilla sugar for Passover (Passover almond extract can also be used)
- ˝ cup chocolate chips (or, bits of chopped, toasted almonds)
Preheat oven to 300°F. Grease or line two cookie sheets with parchment paper.
Beat egg whites at medium speed together with salt, for one minute. Slowly add sugar a bit at a time, and increase mixer speed to high. Add vanilla while you beat. Continue beating mixture for another two minutes until stiff peaks form.
Gently fold in chocolate chips with a spatula. Using a teaspoon, drop batter onto cookie sheet keeping 1” between meringue cookies. Bake until they turn a light golden color, for 25-30 minutes. Cool cookies and remove from cookie sheets.
