Passover Cottage CheeseCake

<< Passover Cottage CheeseCake is an easy cake recipe for the holiday. Serve with fresh fruit, sour cream, yogurt, or your favorite fruit sauce. This easy cake makes a delicious light meal or snack during Passover and year round.

Ingredients:

  • 3 eggs, separated
  • 1/2 cup sugar
  • 1/4 cup lemon juice
  • 1 lb. dry cottage cheese
  • 1 cup milk
  • 1/3 cup matzo meal
  • 1/4 cup butter, melted
  • Dash of salt
  • 1-2 tbsp. Passover preserves or fruit pie filling
  • Optional: 1/2 tsp. Passover vanilla extract, almond extract or vanilla sugar
Preheat oven to 325 degrees F. Grease an 8" square pan.

Beat egg yolks together with sugar until light and fluffy.

In a separate bowl, stir lemon juice, cottage cheese and milk together.

Add matzo meal and cheese mixture, alternately, to beaten eggs, beating at medium speed. Beat in melted butter and vanilla or almond extract, if using.

In a separate bowl, beat egg whites with clean beaters until stiff. Carefully fold them into batter.

At bottom of pan, spoon preserves into centre and spread around in a circle. Pour batter into pan, on top of preserves. Bake for one hour in centre of oven. Turn oven off let cake stay in oven for another hour.

Serves: 6
