Passover Chocolate Macaroons

Passover Chocolate Macaroons are a traditional recipe loved by so many. Light and easy to prepare.
Ingredients for Chocolate Macaroons:
- 6 oz. semisweet chocolate (or 1 cup of chocolate chips)
- 2 large egg whites
- ½ cup sugar
- 1 tsp. vanilla or vanilla sugar for Passover
- 2 cups shredded coconut
Preheat oven to 375°F. Grease of line a large cookie sheet.
Melt chocolate in saucepan over low heat, stirring to make sure that it does not burn or use a double boiler. You may also microwave the chocolate, a bit at a time, using medium power, stopping to stir the chocolate periodically so that it will not burn.
Beat egg whites in a medium-size bowl at medium to high speed for 30 seconds gradually adding sugar. Add vanilla and beat until whites have a fluffy consistency. Gently fold in warm (not hot) chocolate and finally, the coconut.
Drop tablespoonfuls of batter onto greased or lined cookie sheet, leaving 1” between cookies. Bake until a light crust forms for about 12-15 minutes. Cool cookies and remove from cookie sheet.
