Passover Chocolate Chip Cookies

Passover Chocolate Chip Cookies are an easy recipe to make ahead and freeze – a favorite of kids and adults because they melt in your mouth. These delicious cookies are made with either pareve margarine or butter. Passover vanilla extract is listed in the recipe – you can use almond extract instead or 1 tsp. of vanilla sugar, if desired.
Ingredients for Passover Chocolate Chip Cookies:
- 1 cup butter or margarine
- 1 cup brown sugar
- 1 egg, lightly beaten
- 2 tsp. vanilla (Passover vanilla extract, almond extract or 1 tsp. vanilla sugar)
- 1 ½ cups cake meal
- 1 tsp. Passover baking soda
- 1 cup chocolate chips
- 1 cup chopped walnuts or pecans
Preheat oven to 350 degrees F. Grease or line two cookie sheets.
If you are worried about burning the bottom of the cookies, bake cookies on the top rack of oven.
Cream margarine or butter together with brown sugar until smooth. Add egg and vanilla, beating well. Add remaining ingredients and mix only until incorporated - you can use electric beater or mix by hand.
Drop by heaping teaspoonfuls onto cookie sheets or use a small ice cream scoop. Leave an inch or two between cookies - they will spread a bit.
Bake for 14-16 minutes on middle or top rack of oven. Centre of cookies should be soft, not raw and edges will be golden brown. Do not overbake. Cookies will continue to bake once they are removed from oven.
Cool and serve or store in airtight container. You can bake the cookies ahead of time and freeze them.
Makes: Between 2-3 dozen - using a small ice cream scoop, one batch makes about 22-24 cookies.
