Passover Banana Cake

Passover Banana Cake is a moist, flavorful cake that you can serve as dessert, as a snack or even for breakfast.
Ingredients:
- 7 eggs, separated
- 1 cup sugar
- ¼ tsp. salt
- 1 cup mashed ripe bananas
- ¾ cup cake meal
- ¼ cup potato starch
- 1 cup chopped walnuts, pecans or chocolate chips (or any combination)
- Note: if desired, omit cake meal and replace with 3/4 cup potato starch
Preheat oven to 325 degrees F. Lightly grease a spring form or 9” tube pan.
In a large bowl, beat egg yolks with sugar and salt until smooth and creamy. In a small bowl, stir together cake meal and potato starch - and beat into egg mixture. Stir in bananas.
In a separate bowl, beat egg whites until stiff, adding a dash of salt to facilitate the process. Gently fold egg whites into the batter. Fold in nuts and/or chocolate chips.
Transfer batter into prepared cake pan. Bake for 40-45 minutes or until lightly brown on top of cake and centre springs back to the touch.
Cool and remove from pan. If desired, invert pan onto rack and allow it to cool off.
