Passover Apple Dessert

<< Passover Apple Dessert is a simple Passover dish that can be served as a snack or finale to a fabulous meal. Feel free to jazz up ingredients by adding your favorite berries, raisins or bit of jam to the apple mixture.

Preheat oven to 350° and grease a pie plate or 8” square baking dish.

Topping:

  • 2 eggs
  • ½ cup sugar
  • 3 tbsp oil
  • ½ cup matzo meal
  • 1 ½ tbsp. potato flour
  • Juice and rind of ½ lemon
  • Pinch of cinnamon
Beat eggs and sugar together until they are smooth and thick. Add oil and by hand, slowly stir in matzo meal and potato flour until combined. Add lemon juice and if desired, dash of cinnamon.

Filling:

  • 6-7 apples, peeled and sliced
  • ½ cup sugar
  • 1 tsp. cinnamon
  • ½ tsp. lemon juice
  • Potato starch, to coat apples
  • Optional: you can add ¾ cup berries or raisins to apple mixture
Combine apples and other ingredients in a separate bowl. If the mixture is watery, stir in a couple of tsp. of potato starch to coat the apples. Pour apples into prepared baking dish. Spoon topping over apples. Bake at 350°F for 40-50 minutes and remove from oven when golden brown and bubbling. This dessert is delicious hot or cold.
