Passover Apple Cake

Passover Apple Cake is a delicious snack or dessert that is very easy to prepare.
Ingredients for Cake:
- 5-6 apples, peeled, coarsely chopped, in separate bowl (enough to fill 9” square pan)
- 1/2 -3/4 cup raisins, dried fruit or fresh berries
- 3 eggs
- 3/4 cup sugar
- 1/3 cup plus 1 tbsp. oil
- Optional: 1 tsp. vanilla (Passover extract or vanilla sugar)
- 3/4 cup cake meal
- 1/2 tsp. cinnamon
Topping Ingredients:
- 1/3 cup chopped walnuts
- 1/2 cup sugar
- 2 tsp. cinnamon
Preheat oven to 350 degrees F. Grease a 9” square baking pan.
In a medium-sized bowl, peel and chop apples together with desired dried or fresh fruit. Set aside.
In a large mixing bowl, beat eggs together with the sugar and oil (and vanilla, if using) until light and creamy. Add the cake meal and cinnamon on low speed and mix until combined. Pour half of batter into prepared pan. Distribute half of the fruit on top of the batter. Pour remaining batter over the fruit and cover with the remaining apple mixture. Combine topping ingredients in small bowl and sprinkle over fruit.
Bake in centre of oven for about 1 hour and 15 minutes. Check centre of cake for doneness by inserting toothpick – it should come out clean.
Passover Apple Cake serves: 9 pieces
Note: you can double recipe for 9 x 13” baking pan.
