Pareve Berry Sorbet

Pareve Berry Sorbet is a light, calorie-wise mixture of three ingredients: egg whites, sugar and berries. It is a refreshing and nutritious Passover dessert or snack.
Ingredients:
- 5 egg whites
- ¾ cup sugar
- 4 cups fresh strawberries, blueberries, raspberries or blackberries
Beat egg whites, adding sugar a bit at a time, until peaks form, not too stiff.
Add berries and beat on high until thick and frothy. You can also process mixture or use a blender on ‘puree’. Place mixture in covered container in freezer for a day, until it hardens. Spoon into parfait glasses plain or together with fresh fruit.
