Orange Cake - Eggless and Dairy-Free

<< Orange Cake is an eggless cake recipe that is also dairy-free. As a simple pareve baked dessert, is it moist, flavorful and of course, great for anyone with an allergy to eggs. Feel free to double the recipe ingredients and bake in a larger baking dish. The recipe below fills an 8" square baking dish.

Ingredients:

  • 1 1/2 cups all purpose flour
  • 3/4 cup sugar
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 cup orange juice plus 1 tsp. of grated rind
  • 1/3 cup vegetable oil (I use an extra tbsp.)
Preheat oven to 350 degrees F. Generously grease and/or line an 8" square baking dish.

In a bowl, stir together flour, sugar, baking soda, baking powder.

In one shot, add juice, oil and rind. Stir as you would for a muffin recipe, lightly, just enough to combine ingredients without overmixing - this will help to avoid a flat cake.

Transfer batter to baking dish.

Bake for 35 minutes or until golden brown and a toothpick inserted in center comes out clean.

Cool completely. Ice with favorite frosting or serve with fresh fruit or frozen dessert.
