Onion Soup Gratin

Onion Soup Gratin is a dairy soup recipe made with pareve Vegetable Broth and a few other simple ingredients. This delicious onion soup recipe makes a great meal, especially on cold winter days.

Ingredients for Onion Soup Gratin:

  • Vegetable Broth: enough to fill up onion soup bowls
  • fresh (or already cooked) onions that you have sauteed until softened
  • a tbsp. or two of white wine, if desired
  • Stale French or Italian bread, sliced 1/2" thick or croutons
  • Cheese such as Gruyere, Swiss, Cheddar or Mozzarella, enough for melting on top
  • Grated Parmesan cheese, to sprinkle on top for added flavor, if desired
  • Pinch of powdered or grated nutmeg, optional
Simply add onions to the vegetable broth and heat on the stove until the soup is hot, not boiling. Ladle soup into oven proof onion soup bowls. Add a touch of wine, if desired. Top the broth with a slice of bread or croutons, enough to cover the broth. Top the bread with cheese and a pinch of nutmeg, if desired. Sprinkle with parmesan if you want.

Place soup bowls on a large cookie sheet and place on middle or top rack of oven. Turn on the broiler. Keep oven door slightly opened - stay close by and remove soup from oven once the cheese is bubbling and begins to brown. This will take only a few minutes - do not leave the kitchen!

Serve immediately. Delicious.
